How can we sum up our journal, the ambassador of Castigno Château & Village, in just a few lines? Quite a challenge when you consider that it took us no less than 75 pages to explain who we are.
A world, born from the imagination of two bon vivants, that comes to life in the village's houses and the vineyard.

Summer fare – Let us continue our wanderings through Province in search of the finest summer restaurants. The months of August and September lend themselves perfectly to gourmet escapades. And from Amsterdam to Menton, Mykonos to Saint-Tropez, Les Vosges to Occitanie, be they bistronomic or gastronomic, they are all sure to delight!
Today, let us convene in the village of Assignan on the high plateaux of the Hérault, to discover La Table De Castigno, a restaurant run by Chef Stéphan Paroche and his partner Justine Viano.

Hedonism and passion are the guiding words behind Tine and Marc Verstraete's adventure to create their estate in the heart of the Saint-Chinian vineyards. To bring their wine project to fruition, the Belgian couple scoured the world before being won over, in 2007, by these acres of vines, some of which are hundreds of years old and populated by the fifteen characteristic grape varieties of the Languedoc.
The vines are key to the story of Castigno: a third of the estate is given over to them, representing nearly 30 hectares in production. Over the following ten years, they restructured the vineyard and converted it to organic farming.
Grenache is especially well-established in the vineyards of southern France, where it lends the exuberance of its red fruit and spicy aromas to blends.
This black grape variety originating from Spain thrives on dry, stony soils such as those found in the Assignan terroir in the Hérault. This is where Clément Mengus, in charge of the Château Castigno estate, vinifies it, on its own however, in this 2021 Bella Casta vintage.

This was the year of economic recovery declared Rodolphe Wartel, General Manager of Terre de Vins, at the opening of the 2022 Wine Tourism Awards.
Organised by Terre de Vins, in collaboration with Atout France, this event brings together the key players in the French wine industry to evaluate its appeal to tourists. After a painstaking review of 340 entries, 18 winners in nine categories were awarded prizes in the magnificent setting of the Cité du Vin auditorium.

Stéphan Paroche was awarded a Michelin star while based in Provence, more precisely in Paradou in the Alpilles, at the Cicada restaurant. He then decided to try his luck abroad, heading for Asia with his pastry chef girlfriend to settle in Vietnam.
