La Table has been revamped for a more intense experience

Reshaping spaces, honouring nature and the region of Occitanie, creating exclusive areas and employing sustainable practices: our starred restaurant, La Table, is redesigning its layout to offer a more immersive experience in the unique essence of Castigno.

The annual closure at La Table was put to good use. From its reopening in 2022, our guests will discover a redesigned venue, starting with a new lounge area under a magnificent glass canopy, garden side. Outside, nature reveals its many charms: fragrant aromatic herbs, a pond in which our sturgeon splash about, and the landscapes of Occitanie stretching to the horizon. Inside, the atmosphere is hushed, as if enchanted. It is in this new winter garden that the experience of La Table will now begin, where diners will whet their appetites with a few delicate appetizers, cocktails and house spirits, before moving into the restaurant itself. In the dining room, the service has also been the focus of renewed attention, to offer an ever smoother experience.

An in-house shop and private VIP space are the two new additions to La Table. With a souvenir shop so you can bring the spirit of Castigno back home with you, and a private VIP room for 12 guests to enjoy business seminars and meals in the most intimate of settings, La Table just gets better and better. Finally, the restaurant now boasts a cheese cellar and pastry laboratory. Next to the wine cellar, the cheese cellar seems the obvious place to declare our love of Occitanie. And, right next door, guests can take a peep behind the scenes of our brand new, glass-fronted pastry area, home to Castigno's artfully prepared desserts.

In addition to these changes, we have also implemented a more sustainable and common-sense philosophy, spearheaded by our chef duo Stephan Paroche and Justine Viano. This includes a meticulous selection of producers from the region of Occitanie, the promotion of local produce, organic wines, home-grown vegetables, aromatic herbs, honey, olive oil, eggs, the production of our own vegetables and fermented beverages and spirits, and soon, the harvesting of our own truffles and mushrooms: our approach to work is a lifestyle choice.

With its new look and sustainable approach, from its reopening in 2022, La Table is all set to turn your taste buds upside down.
