Languedoc stone walls, Mediterranean-inspired lanterns and hanging lamps, all delightfully picked out in wine-themed colours to reflect the identity of the estate: La Table De Castigno exudes a bohemian chic feel that is utterly captivating.
Refined and distinctive cuisine
Omnipresent in Castigno, vegetables naturally find their way into the dishes of La Table with a cuisine inspired by the Provençal terroir and enlivened by a twist of acidity. Influenced by the South, but also by countries and regions further afield, the culinary signature of chef duo, Stephan Paroche and Justine Viano, is bold and incisive. From Aubrac, the Cévennes and the Thau Lagoon, they have carefully selected succulent oysters, caviar, pasture-reared beef and sweet onions. While from Asia, hints of dashi, turmeric and coriander have found their way into this pair's exciting repertoire. Precise yet playful, this is a cuisine that exudes character and depth.
An engaged
and respectful approach
An integral part of the estate's identity, environmental responsibility is a core concern for La Table De Castigno. In addition to producing a selection of herbs and vegetables, the estate also has chickens and will soon boast its very own beehives. Its network of local producers allows for direct and short food supply chains.
Stephan Paroche & Justine Viano: weaving their culinary magic
Heading up the kitchens is a couple who are passionate about food: Stephan Paroche and Justine Viano.
For her, cooking has always been a way of life. Brought up on great French gastronomy as much as on Asian street food, Justine has created her own inimitable style.
For him, the son of restaurateurs, cooking was the obvious choice, although he had to complete a long course of study before finally being able to don the chef’s apron. After an apprenticeship in the family restaurant, Stephan's signature style came to fruition at the Hameau des Baux, where he was awarded a Michelin star.
With their two chef's hats and two pairs of hands, Stephan Paroche and Justine Viano are now shaping Castigno's gastronomic experience.
